12 oz white meat turkey breast, chopped
1 medium apple with skin, chopped
1 stalk celery, chopped
¼ cup walnuts, chopped
1/3 cup fresh cranberries, chopped
juice from ½ lemon
1 tablespoon chives, chopped
1 tablespoon fresh parsley, chopped
¾ cup nonfat plain Greek yogurt
1 tablespoon Apple Cider Vinegar
¼ teaspoon black pepper
1 teaspoon Stevia
In a medium bowl combine turkey, apple, celery, cranberries, walnuts, chives and parsley. Mix lemon juice into mixture and set aside.
In a small bowl combine yogurt, vinegar, Stevia and pepper; whisk until creamy. Refrigerate both until ready to serve. Upon serving, mix dressing into turkey mixture.
