Pumpkin Spice Latte
1 serving

8 oz hot coffee or 2 oz espresso
3 Tbsp pumpkin puree
½ cup unsweetened almond milk
½ tsp vanilla extract
1 tsp pumpkin pie spice
dash of ground cinnamon
1 tsp Stevia

In a saucepan, whisk together milk, pumpkin and Stevia. Cook on medium heat, stirring until steaming. Remove from heat, stir in vanilla and pumpkin pie spice. Transfer to a blender and process for 15 seconds until foamy. If you don’t have a blender just whisk the mixture continuously with a wire whisk until foamy.
Pour into a large mug. Add the hot coffee or espresso on top. Sprinkle with cinnamon.
