2 cups zucchini

½ cup crispy brown rice cereal

1 tsp ground flax

1 Tbsp brown rice syrup, divided

juice from 1 lemon

½ tsp ground cinnamon, divided

¼ tsp nutmeg

1 Tbsp Stevia



Preheat oven to 350*.

Peel zucchini and cut in half lengthwise. Cut into thin slices and place in a bowl with the lemon juice, stevia, ¼ tsp cinnamon, nutmeg, and ½ Tbsp syrup. Toss until fully coated.

Spray two small glass baking dishes (1 ½ -2 cups) with nonstick cooking spray. Transfer zucchini into baking dish.

In a small bowl mix the brown rice crisps and the ground flax with a fork, crushing most of the crisps. Blend in ¼ tsp cinnamon and ½ Tbsp brown rice syrup. Top the zucchini evenly with mixture.

Bake uncovered for 40 minutes. Serve warm or cold. Top with plain nonfat Greek yogurt for some added protein.
